This Soup is so Easy to Make
Honestly, this soup takes 5 minutes to make max. Just blend the cantaloupe with some crème fraîche and lemon juice, crisp up some prosciutto and serve up a beautiful bowl of light and refreshing soup. This is a perfect quick and easy recipe to impress some guests in a pinch.
Cantaloupe Soup with Crispy Prosciutto and Crème Fraîche

Ingredients
2 small cantaloupes (deseeded and flesh removed)
Juice of 1 small lemon (about 3 tablespoons)
1/2 cup crème fraîche, plus more for garnish
8 oz prosciutto
Directions
- Roughly dice prosciutto and crisp up in a pan with olive oil over medium-high heat (about 4 minutes). Remove from heat and transfer onto a plate lined with paper towel to drain excess oil.
- Place the flesh of the 2 cantaloupes, lemon juice, and crème fraîche into a blender, and combine until everything is well mixed. Transfer the soup into a large bowl and chill for at least 45 minutes and up to 3 hours.
- Pour soup into a bowl, sprinkle a generous amount of prosciutto over the top, and add an additional dollop of crème fraîche.
