Roasted Lemon Pepper Cauliflower

1 head cauliflower, cut into bite-sized florets
2 sticks unsalted butter (16 tablespoons)
2 cloves garlic (minced)
Zest of 1 lemon
Juice of 1 lemon
1 teaspoon salt
1 teaspoon black pepper
Thinly sliced green onions for garnish
Directions
- Preheat the oven to 450 degrees Fahrenheit.
- In a small pot over medium heat, combine the butter, garlic, lemon zest, lemon juice, salt, and black pepper.
- Place the cauliflower in a large bowl with a lid. Pour all of the butter mixture into the bowl, and shake the cauliflower until each piece is well coated.
- On a large baking sheet lined with tin foil, spread the cauliflower into a single even layer. Bake for 30 minutes.
- Place the roasted cauliflower on a plate. Sprinkle with green onions and serve.
